This is one of the best omelettes of Mugello because of the smell
and flavour of "prugnolo" which is a mushroom wich tastes like
fresh flour
Chop the mushrooms in slices and put them in a pan with oil, salt, pepper
and a pinch of parsley or "nipitella"; when they are browned
add the beaten eggs and make a tasty omelette, cooking both sides.
