Take some big celery ribs, chop them in pieces of about 10 centimetres
long, boil these pieces and then widen them in order to fill them with
a mixture of chopped chicken's livers, egg yolks, salt, pepper and nutmeg.
Dip them in a sort of batter made with egg and flour and fry them in very
hot oil.
It is possible to cook them again with few tomatoes and butter.
