Clean the French beans called "serpenti" (snakes), wash
them and burn them in abundant salted water and drain them. In a big tin
fry lightly onion and olive oil and when the onion is browned add pieces
of peeled tomato. Cook for about 30 minutes. Then add the French beans
and finish to cook them over a low fire for 20 minutes more.
