These two domestic animals have a tasty and fatty meat and they produce
a sauce which is a good seasoning for macaroni; the one of duck is more
indicated to dress "tortelli di patate". Chop very finely celery,
parsley, carrot and onion, then put all this stuff in a pan with oil,
salt and pepper and on this layer of vegetables put the duck. Brown very
well both sides of the duck. Add some tomato sauce or tomato purée
diluted in tepid water and then cook the duck adding broth or water. When
the duck is cooked remove the grease from the sauce, because it will be
too greasy and dress the macaroni or "tortelli di patate".
If the sauce is not used to dress a first course, it can alternatively
be used to cook vegetables previously boiled and then serve it as a seasoning
for the duck. The same recipe can be used to cook the turkey.
