When
we have good lean meat, it is possible to enrich it if "rifatto"
with onions, that means if cooked with onions.
Take some big red onions, cut them in thin slices, make them wither very
slowly in the olive oil, hen add some pieces of tomatoes and some tomato
purée, salt, pepper and small pieces of meat.
Cook it slowly until tomatoes will produce a tasty thick sauce.
This course has family traditions and it was prepared in order to recoup
leftovers.
